The European Drinking Water Directive 2020/2184/EU specifies hygienic requirements for water-bearing components up to the point of use. The Drinking Water Ordinance is the national implementation of this European regulation. But in contrast, the scope ends at the first safety device of the appliance. Thus, commercial kitchen equipment is also subject to this regulation as soon as it is connected to the water supply.
